It’s virtually impossible to make a big pile of refried beans look appetizing in a picture, but trust me, these are GOOD. A super easy side-dish to any Mexican meal.
Refried Beans
serves 4 / adapted from vampire gran
Here’s what I used:
- can of pinto beans
- can of black beans
- 2 cloves of garlic, minced
- 1/2 red onion
- 2 tbsp cumin
- salt, pepper
Here’s what I did:
- Heat a little olive oil in a large skillet over medium heat. Add the onion, season with salt, and let cook for a few minutes until tender.
- Drain and rinse the beans and add them to the skillet. Mash with a potato masher until it’s a smooth paste.
- Add the cumin, salt and pepper, and garlic, and cook for a few minutes. If it’s dry, add some water. Easy!
