No Butter Chicken

NO butter chicken! I love me some butter chicken, a classic indian curry which usually relies on a few tabs of butter to add silkiness to the sauce. Not this one! And it’s still totally delicious. This is a cinch to make, and thanks to a well-stocked spice cabinet and pantry, I can whip this up any time I crave indian takeout, which is at least once a week! Score.

Spicy Thai Basil Shrimp (and a glimpse of my new kitchen)

I’m back! And soooo happy about it. We’ve finally settled into the new place and love love love it. At the end of this post you can catch a peek of our new kitchen (which I LOVE), but first let me tell you about this dish I whipped up for lunch on Saturday.  YUM. We had tons of veggies in the fridge and a humungous stack of recipes that have been piling up over the last couple of weeks. This dish is fresh and delicious and very reminiscent of thai take out — without waiting for delivery or wondering what exactly is in your food. Will definitely make this again, maybe next time with chicken.

Also, today marks this blog’s 2 year anniversary! I had to triple-check the dates because it feels like this little blog has been a part of my life for a LOT longer than that. Thanks, everyone, for inspiring me, reading my ramblings, and cooking along with me! xoxo.

Chicken Korma (finally)

You’ve seen one or two korma recipes on this blog here, and that’s because I keep trying and trying (and trying) to mimic the smooth, creamy kormas I have in indian restaurants (and seemingly never at home –until now!). Keep in mind, this is one of my favorite dishes of all time and I have very high standards with it.

Well, people, I’ve got the best homemade chicken korma to date here. Absolutely restaurant quality and amazingly delicious. Yay!

Curried Wheat Berry Salad

I’m feeling a little under the weather today, so I wanted to make a nutrient-dense lunch to hopefully perk myself up a bit. Also, I received a big bag of wheat berries from my CSA this week and had no idea what to do with it. Eventually, I’d love to sprout them to make sprouted grain flour/bread, but alas, today is not the day for such strenuous efforts.

This salad is so good! Chewy wheat berries are a nice change up from couscous or other grains, and pack a nice nutritional punch, too.

Indian Pizza with Cilantro Pesto and Zucchini

The first couple of times that I made this pizza, I burned the crap out if it, yet, mind you, still ate it and loved the flavors. I figured that I’d wait to share the recipe for a time that I didn’t burn the crap out of it, since I knew I’d be making this over and over again. Well, friend, behold this awesome indian pizza. It is such a great combination of flavors, and super easy to throw together (especially if using store-bought dough).  Since I am always trying to use up my spices so I can keep a fresh stash, I made a homemade curry powder blend, but feel free to use your favorite store blend.

Indian Butter Chicken

After my first bite of this dish, I said that I thought this might be the best thing that I’ve ever made.  If you’re new to Indian food, this is a great way to dive in. The sauce is creamy and spicy, and is perfect for mopping up with some whole wheat naan. Adios, take out!
