Middle-Eastern Spiced Beans (Fasoulia)

I love eating beans with eggs for breakfast, so now that the temps are dipping a little lower, I thought now would be a good time to make a big pot of these Middle Eastern-spiced beans to eat throughout the work week for breakfast. Topped with a fried egg, of course.

The recipe calls for kidney beans, but I used a mixture of kidney beans, chick peas, and black beans to use up what I had on hand.

Summer Vegetable Skillet

Have you ever seen Put a Bird on It? The cast from Portlandia put birds on things. Once you watch this, you will definitely notice how many things have birds on them for absolutely no reason. I have fallen prey (haha, get it?) myself in buying things with random birds on them.

Anyway, I feel like I could do my own skit called “Put an Egg on It”. Eggs are probably my favorite food (at least in the top 5), and I feel like many, many dishes can be easily elevated by putting an egg on it. I put an egg on this summer veggie skillet (SO GOOD), and it was perfection. This skillet dish is also perfect for summer as it doesn’t require you to turn the oven on, which I certainly appreciate. I used some tomato and cheese chicken sausages I had from Costco, but you can use any pre-cooked chicken sausage. Delicious!

Deep Dish Sausage Pie with Hashbrown Crust

This was one of those clean out the refrigerator types of meals. Make this when you’re too lazy, poor, or uninspired to order takeout — We both agree that it was WAY better than what we expected, and way better than take-out, too. Next time I may try with a mixture of eggs and egg whites to make it a smidge healthier. Literally add whatever’s in the fridge and go to town.

Sweet Potato, Kale, and Bacon Breakfast Burritos

Make ahead frozen breakfast burritos are one of our favorite weekday breakfast options. Every couple of weeks I’ll make a big batch of burritos with varying ingredients (usually some sort of reduced fat meat product like chicken sausage with peppers and onions), but I just loved the idea of adding kale and sweet potatoes for a nice nutrient punch in the morning.

Make Ahead Frozen Breakfast Burritos

These babies are our new best friend. I made a big batch of these on Sunday, wrapped them in plastic wrap, threw them in the freezer, and POOF, a hot, homemade breakfast that we could bring to work with us and reheat in no time. I made these with chicken sausage, but you could literally put anything you like in them. I am going to do a batch of bacon, egg, and cheese next week and another veggie filled batch in the very near future.

Bacon & Egg Quesadillas

This breakfast was sooooo good — perfect for a day when I’m home sick with a little bit of a cold. The only good thing about feeling crappy and being home is that I get to make a slightly more involved breakfast than I would on a normal weekday. Since I bought a package of about 2,000 tortillas as Costco last week, I’ve been trying to come up with ways to use ‘em up. Now, I’ve certainly made egg quesadillas before, and I’m usually less than impressed. I think it’s because they seem too wet or something — probably from the scrambled eggs. The over-easy egg is definitely the way to go! Throw in some cheese, bacon, and black beans — YUM. Combine this with the fact that Feds circa 1988 is on TV right now (one of my favorite movies ever!), I’m a happy, albeit sick, girl.

I yanked this recipe out of my Rachael Ray mag yesterday (no judgment) and knew that I would make it right away. At first I thought it was an egg perched on a biscuit (nothing wrong with that), but as I read the recipe, I realized the yolk was atop a pile of whipped egg whites. Egg whites! Brilliant.

Sweet Potato Breakfast Taquitos

I was psyched to stumble upon this recipe this morning as I was trying to figure out to do with odds and ends still in the fridge before doing the week’s grocery shopping. I pretty much always keep corn tortillas in the house since they have a great shelf life and are more flavorful than flour tortillas.  And this time of year, I always have a random sweet potato or two hanging around that didn’t get eaten during the week. These taquitos rock! Will definitely be making again.

Fiddlehead, Bacon, and Mushroom Tart

This is a strange post because I really didn’t care for this dish, HOWEVER, I think it’s because deep down, I don’t really like fiddleheads.  When they came bundled in our CSA box last week – along with the ‘shrooms – I was once again seduced by their cuteness and decided to give them a shot.  I mean, I like them when my mama breads them and fries them (but, really, what isn’t good when it’s breaded and fried?), and what’s not good on puff pastry, especially when eggs and bacon are involved?? I gotta say, they made this tart kind of taste like house plant to me. That said, if you’re a fiddlehead lover, I’d love to know what you think!

Biscuit Souffle Breakfast Casserole

As soon as I saw this recipe, I knew I had to make it. I’d like to say because it’s super kid friendly, but really I just love biscuits in any form. (Remember these?) Add eggs and veggie sausage and I’m sold. In terms of the pre-made tubes of biscuits — I like the Trader Joe’s for their respectable ingredient list (all real food).

This casserole is a little like a savory french toast, and it smells heavenly while baking. Enough to wake two sleeping teenagers from their Sunday morning coma, which says a lot.

Mini Frittatas

Croque Madames (quickened, definitely not lightened)

In a continuing effort to improve my photos, I took a little field trip to one of my favorite shops, Paper Source, to purchase some props. Behold one of the pieces of beautiful wrapping paper I purchased to use as a background. Despite my somewhat inexplicable lack of motivation in pretty much every area of my life right now, I have, somewhat miraculously, managed to construct a DIY light box, very much using Ashley’s model and other resources on the interwebs — something that’s been on my to-do list for many months.  I’m starting to see some improvements around these parts, which is a nice motivator. Who knew?

Oh, and the food. This sandwich is the freaking bomb. Make it, immediately.

Quinoa, Butternut Squash & Leek Pilaf with Runny Eggs

A few years back I wouldn’t ever eat egg yolks when eating eggs for breakfast. As B and I were eating this yummy, healthy dinner tonight (made even yummier from runny eggs), I was reminded of back when we first started dating and how he never made fun of me for eating around the yolk when eating fried eggs. Now that’s true love. And craziness because yolks are delicious — nature’s best sauce, in my (now) opinion.
