I made these cod cakes on Christmas Eve and they were a huge hit. In fact, I made them early in the day (and reheated them in the oven when it was time to serve) and people kept popping in the kitchen to steal one. SO delicious and easy.
When I saw this recipe I immediately thought of my mom as she looooves popovers. Since my lovely mother is on an extended one-month vacation in Puerto Rico right now (jealous…), I decided to make these to hopefully make her a little jealous in return

Who doesn’t enjoy a mini pie? I whipped these up in about 20 minutes for a party and they were yummy! I of course used store bought crust because, let’s face it, I avoid baking at all costs and I certainly don’t do crust. As far as apple pie goes, this is a pretty standard variety — which was exactly what I was craving.
Do I even have to say anything about these little genius muffins? Legit, mac & cheese in muffin form. Handy. Convenient. Delicious. Versatile. And I can’t wait to try them in a mini-muffin tin for parties. Yum.
Truth time: I blatantly failed at following this recipe. I put the butternut squash in the microwave to defrost and promptly found it still sitting in there hours after we were done eating. Oops. And I also forgot the cream cheese, which I think would make almost anything better. Truth be told, as I made them, these were a teensy bit on the bland side — but still amazeballs good because it’s handheld pasta and melted cheese. Try making the recipe as it was originally written, though – I know I will (try)!
These mini quiches are not only adorable, but are a perfect idea for breakfast as it allows you to squeak some veg in the morning hours, which I’m always trying to do.
After realizing that I have 238 recipes saved (from blogs alone!) that I want to make, I decided it was time to start chipping away at the list. This endeavor started with breakfast this morning. These were super easy, pretty darn healthy (using egg beaters), and overall a great go-to breakfast. I look forward to grabbing a couple of these little guys on my way out the door to go to work this week.
I’m trying to get back on the weight watchers train again…this is meal #1. And it was GOOD, even though the picture is not stellar. The mini meatloaves, aside from being adorable (i like mini things), were really delicious — from the Cook Yourself Thin TV show/cookbook. I was scared off after that Cook Yourself Thin chocolate beet (+salmon, oops) cake incident, but I may just have to try a few more things from that cookbook now.
