Refried Beans

It’s virtually impossible to make a big pile of refried beans look appetizing in a picture, but trust me, these are GOOD. A super easy side-dish to any Mexican meal.

Here’s what I used:

  • can of pinto beans
  • can of black beans
  • 2 cloves of garlic, minced
  • 1/2 red onion
  • 2 tbsp cumin
  • salt, pepper

Here’s what I did:

  1. Heat a little olive oil in a large skillet over medium heat. Add the onion, season with salt, and let cook for a few minutes until tender.
  2. Drain and rinse the beans and add them to the skillet. Mash with a potato masher until it’s a smooth paste.
  3. Add the cumin, salt and pepper, and garlic, and cook for a few minutes. If it’s dry, add some water. Easy!
