Pan Roasted Potatoes

I was in a steak-and-potatoes kind of mood, and this recipe is perfect for getting crispy and creamy potatoes.

Pan Roasted Potatoes
Serves 4

Here’s what I used:

  • 1 pound mixed potatoes (baby reds would be good here too), quartered
  • 3 tbsp olive oil
  • 1 tbsp minced rosemary
  • 1 tbsp minced thyme
  • 1 garlic clove, smashed
  • salt, pepper

Here’s what I did:

  1. Heat the olive oil in a large cast iron skillet over medium-high heat.
  2. Add the potatoes and allow to cook for about 25 minutes, turning every few minutes for even browning.
  3. After 25 minutes, season with salt, pepper, thyme, and rosemary. Throw in the smashed garlic clove, toss it all around, and cover for the last 1o minutes to finish cooking.
