Pan Roasted Potatoes
Here’s what I used:
- 1 pound mixed potatoes (baby reds would be good here too), quartered
- 3 tbsp olive oil
- 1 tbsp minced rosemary
- 1 tbsp minced thyme
- 1 garlic clove, smashed
- salt, pepper
Here’s what I did:
- Heat the olive oil in a large cast iron skillet over medium-high heat.
- Add the potatoes and allow to cook for about 25 minutes, turning every few minutes for even browning.
- After 25 minutes, season with salt, pepper, thyme, and rosemary. Throw in the smashed garlic clove, toss it all around, and cover for the last 1o minutes to finish cooking.
