Low & Slow Sweet Potatoes

Last week I was struck with a sweet potato craving so severe that it actually crept into a dream. Once that happened, I knew I had to hit the grocer and pick up some orange sweeties. I read about this “low & slow” method, and couldn’t wait to try it. This is a fabulous way to cook sweet potatoes! Might be my new go-to, even. Craving satisfied!

Mac and Cheese with Shrimp and Radicchio

Mac and Cheese with Shrimp and Radicchio - Just the TipI’ve made this at least a dozen times~ it’s so good and really unique. The radicchio adds an awesome bitterness (I looooove bitter flavors…hello, my love for broccoli rabe).  Also, do not skip the anchovies. I promise, you won’t even know they’re there but it adds so much to the flavor.

Protein Packed Whole Wheat Banana Nut Muffins

Once in a great while, I see a recipe that makes me want to jump up, whip out my rolling pin, and get baking. This process usually ends in tears, but once in a while it works out lovely.  These muffins are SUPER healthy (once you take a peek at the ingredients you’ll see what I mean) and delicious. Smear them with a little yogurt butter and dig in!

Mini Frittatas

After realizing that I have 238 recipes saved (from blogs alone!) that I want to make, I decided it was time to start chipping away at the list. This endeavor started with breakfast this morning. These were super easy, pretty darn healthy (using egg beaters), and overall a great go-to breakfast. Roasted Asparagus with Fig Balsamic Reduction

I’m back, bitches!

Ahem. By that, I mean thanks for hanging in there while I was on temporary leave these last couple of weeks. You see, I have indeed been cooking, but just not much that I’ve been overly enthusiastic about. Since I originally began this blog as a way to keep track of my recipes and what I liked, my one hard and fast rule is that I won’t post anything that I wouldn’t want to make again. So here we are.

But tonight, however, we prepared a fantastic meal, wholly inspired by Jenna over at Eat Live Run, which included this asparagus dish. Enjoy!
