Spinoccoli Pizza

Pizza night at our house! We served this looker and a nice little stuffed crust number topped with turkey pepperoni. Love pizza night.

Spinoccoli Pizza
Just the Tip / Inspired by Annie’s Eats

Here’s what I did:

For the white sauce:

  • 1 tbsp butter
  • 1 tbsp flour
  • 3/4 cup half and half (or milk)
  • 1 clove garlic, smashed
  • salt, pepper, whole nutmeg
  • 6 tbsp. freshly grated Parmesan cheese

For the pizza:

  • 1 ball of store-bought pizza dough
  • olive oil, for brushing
  • 1/2 cup packed baby spinach leaves, torn
  • 1 cup very small broccoli florets
  • 3 oz shredded mozzarella cheese
  • 3 oz shredded cheddar cheese
  • grated parmesan cheese

Here’s what I did:

  1. Preheat the oven to 500. Pop your pizza stone (or inverted baking sheet, if you don’t have one) in the oven and let preheat for at least a half hour. Meanwhile, roll out your dough to about 14″. Brush the perimeter of the dough with a little olive oil.
  2. To make the white sauce, melt the butter in a small saucepan over medium-high heat. Whisk in the flour and cook, whisking constantly, until bubbling and light golden, about 1 minute. Whisk in the half and half and add in the clove of garlic. Season with salt,  pepper, and grated nutmeg to taste.  Cook, stirring frequently, until the mixture thickens and bubbles.  Remove from the heat and whisk in the grated Parmesan until completely melted and smooth.  Discard the garlic clove.
  3. Remove the pizza stone from the oven and transfer the pizza dough to it. Spread a thin layer of the white sauce over the crust, leaving a border for the crust. Sprinkle the torn spinach and broccoli over the dough. Sprinkle on the shredded mozzarella and cheddar cheeses, and a little more parmesan. Bake until the cheese is melted and bubbling and the crust is lightly browned, about 8-10 minutes.
