Mustard Chicken

Everyone needs a new chicken recipe from time to time — and this one is yum. This recipe is all about the sauce. Mustard is one of my favorite things ever, and I love anything involving a sauce. Try it when you’re in a chicken rut!

Just the Tip / Inspired by Kalyn’s Kitchen
Serves 4

Here’s what I used:

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • salt and pepper
    For the sauce:
  • 1/4 cup light mayo
  • 1/4 cup light sour cream
  • 1 tbsp dijon mustard
  • 1/2 tsp dry mustard
  • 1/4 tsp ground ginger
  • 1/2 cup chicken broth
  • chopped parsley for garnish

Here’s what I did:

  1. Pat the chicken down with a paper towel and season both sides with salt and pepper.
  2. Heat the olive oil in large cast iron pan over medium-high heat. Brown on both sides, about 5 minutes per side. While chicken cooks, put all sauce ingredients in bowl or large measuring cup, and whisk to combine.
  3. Once the chicken is browned, lower the heat and pour the sauce over top. Simmer on low heat for 15-20 minutes. When the chicken is cooked through, remove from the pan and reserve on a platter covered in foil. Whisk the sauce and reduce to thicken as needed. Pour the sauce over the cooked chicken breasts and garnish with parsley.
