Everyone needs a new chicken recipe from time to time — and this one is yum. This recipe is all about the sauce. Mustard is one of my favorite things ever, and I love anything involving a sauce. Try it when you’re in a chicken rut!
Mustard Chicken
Just the Tip / Inspired by Kalyn’s Kitchen
Serves 4
Here’s what I used:
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- salt and pepper
For the sauce: - 1/4 cup light mayo
- 1/4 cup light sour cream
- 1 tbsp dijon mustard
- 1/2 tsp dry mustard
- 1/4 tsp ground ginger
- 1/2 cup chicken broth
- chopped parsley for garnish
Here’s what I did:
- Pat the chicken down with a paper towel and season both sides with salt and pepper.
- Heat the olive oil in large cast iron pan over medium-high heat. Brown on both sides, about 5 minutes per side. While chicken cooks, put all sauce ingredients in bowl or large measuring cup, and whisk to combine.
-
Once the chicken is browned, lower the heat and pour the sauce over top. Simmer on low heat for 15-20 minutes. When the chicken is cooked through, remove from the pan and reserve on a platter covered in foil. Whisk the sauce and reduce to thicken as needed. Pour the sauce over the cooked chicken breasts and garnish with parsley.
