Ok, it’s detox time. The holidays, while one of my favorite times of year, invites eating waaaaaay too much naughty food. This dish is a lovely detox dish after indulging at Thanksgiving. Couldn’t be easier and full of tons of flavor.
I wish I could properly describe to you how awesome this pizza is. This pizza uses the roasted veg I just told you about, in addition to fresh ricotta cheese. Each bite is different from the next, and I think I liked it cold the next day even better. Must try!
I am a big fan of roasted vegetables in general, and this is just a perfect combination to accompany pretty much any meal. We had this alongside roasted chicken a couple of nights ago, as a “hash” for breakfast today with some poached eggs, and am about to transform the rest of the leftovers into a yummy fall pizza. Versatile and super simple.
