Dare I say this is the best salmon I’ve made? If you’re familiar at all with this blog you know I love salmon and it’s pretty much my ‘go-to fish’, but this was VERY good. Sweet and spicy (not in a heat way) – perfectly cooked (first seared on the stove and then finished gently in the oven) – Delicious flaky deliciousness. What can I say, we just loved it. Pan-Roasted Spiced Salmon
Just the Tip / Inspired by a sweet pea chef
Serves 2 / 10 ww pts+
What I used:
- 1 lb salmon, cut into 2 filets
- 1 tbsp olive oil
- 2 tbsp brown sugar
- 2 tsp kosher salt
- 1 tsp ground black pepper
- 1/2 tsp ground cumin
- 1/4 tsp dry mustard
- 1/8-1/4 tsp ground cinnamon
What I did:
- Preheat oven to 350.
- Combine the brown sugar, salt, pepper, cumin, mustard, and cinnamon in small bowl. Rub the spice mixture on the flesh of the salmon (you’ll have a little spices leftover).
- Heat the olive oil in a non-stick saute pan over high heat. Sear fillets, flesh-side down, for about 2 minutes. Then, flip and transfer pan to the oven for about 5 minutes. Serve!
