Roast Chicken with Fennel and Squash

BIG welcome to fall. My favorite season has unofficially arrived and I’m just thrilled about it. Tonight, after a very very long week, I roasted this lovely chicken, mashed some sweet potatoes, slipped on some nap socks (favorite), and popped a movie in to watch with the kiddos who are visiting for the weekend. Ahhhhhhhhh.

These sweet dumpling squash came from a bit of an informal vegetable swap with a co-worker — I had never actually heard of them before, but they reminded me a lot of acorn squash (easy swap out). The fennel practically candies in the oven and is sooo addictive. Next time I will use two bulbs. Enjoy!

Healthier Buffalo Chicken

Chicken Korma (finally)

You’ve seen one or two korma recipes on this blog here, and that’s because I keep trying and trying (and trying) to mimic the smooth, creamy kormas I have in indian restaurants (and seemingly never at home –until now!). Keep in mind, this is one of my favorite dishes of all time and I have very high standards with it.

Well, people, I’ve got the best homemade chicken korma to date here. Absolutely restaurant quality and amazingly delicious. Yay!

Baked Stuffed Greek Chicken

I love a good stuffed chicken breast, but I love even more when I have all the ingredients I need on hand when a particular craving strikes. Since my list of recipes-to-try grows more ad more each week, I also love knocking one off the list from time to time. I ripped this out of RR’s Everyday Magazine because it looked like an easy, healthy weeknight recipe.  I served it with English Peas (recipe soon!) and my standby cous cous.

Indian Butter Chicken

After my first bite of this dish, I said that I thought this might be the best thing that I’ve ever made.  If you’re new to Indian food, this is a great way to dive in. The sauce is creamy and spicy, and is perfect for mopping up with some whole wheat naan. Adios, take out!

General Tso’s Chicken

Another Rocco recipe. Let me elaborate — another fabulous Rocco recipe from his book Now Eat This. It’s no secret that I heart this book of his, and wouldn’t you know it, the man came out with a new book this week! BUT, before I will allow myself to purchase another. cook. book., I promised myself that I would make a few more recipes that I’ve dog-eared from Now Eat This.

This recipe, “Almost General Tso’s Chicken”, as Rocco called it — is sassy. It’s got a healthy kick to it, which helps to balance out the sweetness that the sauce offers. I’ve made this sauce a couple of times for a number of Rocco’s recipes — you can find the recipe for it here. I like to make it over the weekend when I have more time and stick it in the fridge — that way it’s ready when you want to use it and makes dinner a whole lot easier.  Overall, this meal is a GREAT stand-in for crazy fattening chinese take out — score.

Easy Baked Pesto Chicken

I am having a love affair with pesto. Strangely, up until recently, I never cared much for it. I think it was the thyme pesto that really made me turn a corner into full on love.

This chicken is fabulous. Low carb (except for the crusty bread we used to sop up all of the pesto-y juices, of course), cheesy, tender, juicy. Seriously, so good — and couldn’t be easier.

We’re in the middle of a snowstorm here in Boston and this is some perfect comfort food for such an event. While this recipe uses some shortcuts (which I’m happy to use), it is still a super wholesome and delicious chicken soup. This base soup would be great with noodles instead of the dumplings too, if you want to mix it up.

Chicken, Broccoli*, & Ziti*

This is my take on the classic Italian-American dish Chicken, Broccoli, and Ziti, which I’ve been craving lately for some reason. I changed it up and used whole wheat rigatoni instead of ziti and brussels sprouts leaves instead of broccoli since I’m going through a brussels sprouts thing right now. This was yummy! Tasted eerily like any mac & cheese I’ve ever made, yet there was no cheese….interesting. Anyway, try this! It was yum.

Whole Wheat Orzo with Butternut Squash, Chicken, & Bacon

I made this yummy dish for a couple people, one vegetarian, one not. This is one of the rare dishes that you can easily make a meat & meatfree version without literally cooking the dish twice or otherwise sacrificing flavor. Add in cooked bacon and chicken at the end and blam! – everyone’s happy.

Buffalo Chicken Mac & Cheese

In order to maintain my Awesome Girlfriend status, I decided to make this dish for the Patriots’ game on Sunday. Turns out there was no Patriots’ game this week, but that didn’t stop us.

Ok, let me just say that there is nary a vegetable to be found in this dish, unless you count onion, celery, or garlic (….oooh! and parsley! parsley is kind of healthy!…), lots of cheese, and buttery breadcrumbs. And it’s worth it. I did, however, serve this up with a huge pile of sautĂ©ed spinach to cut the guilt a little bit. 🙂

Brian and I ate this in silence, exchanging the occasional happy looks and yummy sounds. So delicious.
